Day 38 - 41 ... Stressful time, stopped keep up with it!!

I'm a little behind on my blog post, probably because I haven't been doing the best on the calorie counting. That's okay though, I've got a lot going on!!

Day 38
I went to babysit in the morning, and I remember forgetting to grab something to munch on while the 10 month old baby was taking a nap. When I got home, I remember eating a corn dog and some honey mustard. I know that I did not go exercise, but I have no clue what I ate for dinner Wednesday night. Hmmm... maybe it wasn't too bad?

Day 39
Thursday was the day we had been waiting for since we moved down to Biloxi. We found out where Jason's next base is going to be. While Jason requested places in the South and along the East Coast, we ended up right smack in the middle of the country: Edin, Oklahoma. Another spouse and I were throwing all the guys a party after finding out all the new bases. I had each guy tell me their favorite entree, side dish, and dessert. Then I picked 1 random thing for each guy and made a mismatched meal for everyone's favorites. We had:
  • Spaghetti
  • Mini Hamburgers (put on sister schubert dinner rolls)
  • Macaroni and cheese
  • Potato salad
  • Salad
  • Apple pie
  • And Jason's favorite - Chocolate Trifle!
I didn't eat much, but I know none of the selections were low on the calories. I enjoyed it... after all, I'm moving, too!

Day 40
After finding out about our new "adventure," I decided that the diet was out the window for the day. Jason and I ate leftovers for lunch, I didn't work out, and we had Whataburger for dinner. Then we lounged around watching both Barbara Walters's specials from Thursday night. Perfect evening! :)

Day 41
So, Saturday wasn't an intended day without diet, but it ended up that way. I started the morning by playing my last tennis match as a member of Martin Tennis in the Mississippi Gulf Coast. I played for over an hour and a half, so that was at least 400-500 calories burned (in a hurry so not taking the time to look it up). Lunch was at Waffle House with my bff Lauren, and then we went back to my house to get organized for my trip. At the last minute, Jason and I decided to meet Lindsey and Phil at the Mississippi Surge hockey game. Our course, we didn't have time to eat dinner there - looks like we stuffed our faces at the game! We had a wonderful time (and I thoroughly enjoyed my french fries in a cup... but the pizza wasn't great). Oh well... even with tennis I know it didn't cancel out my pizza.

So now, here we are, Day 42. I drove to Tuscaloosa, ate lunch with my parents at Taco Casa (yum!), and I am now waiting to meet up with my friend Jennifer. She accepted a new job in Tulsa, OK and asked if I'd go with her to look for an apartment. An all expense paid trip for both of us... and little did I know I was going to be moving a mere 2 hours away in February! This trip (Sunday - Thursday) wasn't factored in when I decided this challenge, so I'm not sure how well this free food is going to mesh with my diet. I'm sure after my trip I'll get a basic rundown of the week (similar to this blog post). Anyway, hope everyone has a wonderful week and happy eating! :)

Day 37 ... Lean Cuisine - Not the Tastiest Meal!

Breakfast
  • 2 Mini Quiches (95 calories x 2 = 190 calories)  
    • Finally finished these up. I hate wasting food (guess that's part of my problem), so I've been trying to eat them. So more icky onion taste in my mouth anymore. 

Lunch
  • Pork Tenderloin Sandwich (342 calories) 
    • Half a serving of the pork tenderloin from Sunday night (92 calories)
    • Mayonnaise (90 calories)
    • 2 slices of bread (160 calories)

Dinner
  • Lean Cuisine - Roasted Garlic Chicken Pizza (15 calories) 
    • This "pizza" was disgusting! I couldn't stand to eat more than 3 or 4 bites... not how I wanted to spend my calories. I threw it away.
  • Corn Dog (180 calories)
  • Honey Mustard (60 calories)
I decided to make some hot chocolate tonight. I bought the diet kind of Swiss Miss
Exercise
  • Elliptical (125 calories)

Day 36... Finally!

I've made it through another week of watching (or not-watching) what I eat, counting calories, exercising consistently, and playing tennis when I can. At the end of Week 5, I should be at 142 calories. With a few set backs (Thanksgiving and that entire weekend, plus this past weekend), I expected to be know where near 142 lbs. Luckily, I weighed myself first thing and the scale was shocking ...

146?! That means I lost 3 lbs after the week after Thanksgiving! Somehow I lost weight, even after wrapping up each blog for the past 3 or 4 days by saying "I didn't save any calories" or "I ate more than I should." So by looking at the past few days of "overeating" it is making me wonder how accurate all this is. I should not have lost weight if I was over on my calories so much. However, this is the plan I've decided to take, so I'm going to stick with it for now.

Breakfast
  • 2 Mini Quiches (95 calories x 2 = 190 calories)  
    • A few mini quiches were left over from dinner last night. I thought the onion was strong at dinner, but it is even stronger when the quiches/muffins are at room temperature. Oh wow... a little too much for me! 

Lunch
  • McDonalds, kinda ( 160 calories)
    • I was going to eat left over pork, but then Jason wanted McDonalds. Lovely, right? I told him I didn't want anything, that I was going to eat pork, but then he sat down next to me. A McDouble and fries is one of my favorite meals. ever. So I snacked a little on Jason's food (taking about 1/4 of his McDouble and probably 1/8 of his large fries).
    • 1/4 McDouble (97.5 calories)
    • 1/8 Large Fries (62.5 calories)

Dinner
  • Snacks at the tennis court (500 calories)
    • After the tennis match, there is always a few appetizers, water, and beer for mingling together after the match. Last night I thoroughly enjoyed the cheese ball, a dip, and a brownie or two. I don't have the calories for what I ate because I didn't make it and I'm not sure what all was in it. My guess would be around 500.

Exercise
  • Elliptical (150 calories)
  • Singles Tennis match for at least 90 minutes (604 calories)
    • Last night was probably the most evenly matched competitor I've played in the singles league (thought this was 2.5 and not 2.0). I lost the first set 6-4, and I really lost the second set (6-1). I'm pretty sure the cold weather got the best of me for the second set... a chilly 40 degrees is not tennis weather. Anyway, we had a great time playing and chatting.

Day 35 ... Will I ever eat less than my calories again??

Breakfast
  • Juicy Porkchop made by Jason (138 calories) 
Lunch
  • Left Over Buffalo Wild Wings Wrap (520 calories)

Dinner
  • Chipotle Crusted Pork Tenderloin (183 calories)
    • Ingredients
      • 1 teaspoon onion powder
      • 1 teaspoon garlic powder
      • 3 Tablespoons chile powder
      • 1 1/2 teaspoon salt
      • 4 Tablespoons brown sugar
      • 2 (3/4 lb) pork tenderloins
    • Directions
      1. Mix all ingredients (but pork tenderloin) in a large resealable bag. Place tenderloin in bag, shake, and coat meat evenly. Put in fridge for 10 minutes.
      2. Medium-high heat for grill. Lightly oil grill grate, and arrange meat on grate. Cook for 20 minutes, turning meat every 5 minutes. Remove from grill, let stand for 5 to 10 minutes before slicing.
    • Jason really liked this recipe. I wasn't too much of a fan of the chipotle crust, but I ate it (and will eat the left overs!)
  • Easy Mini Quiches (95 calories x 4 + 380 calories)
    • Ingredients
      • 6 slices bacon chopped
      • 1 onion chopped
      • 3 eggs
      • 3/4 cup buttermilk baking mix
      • 1 1/2 tablespoons chopped fresh parsley
      • 2 cups shredded American cheese (I used colby-cheddar because that's all I had)
    • Directions
      • Preheat oven to 350 and grease mini-muffin pans (makes 24 minis... or 12 regular).
      • In a large skillet, fry bacon and onion together for about 5 minutes.
      • In a medium bowl beat the eggs. Stir in baking mix, parsley, cheese, bacon, and onion. Spoon into greased muffin pans.
      • Bake for 10 to 15 minutes or until tops are lightly brown.
    • I followed this recipe exactly and in no way where these like quiches. However, they were really good. The reason I made this was because I am wanting some new appetizers for a few parties we are having this month. I wanted to try this one out before party day. They were really good, but the onion flavor was very strong. I think I'll use less onions next time.

Day 34 ... Another Day... More Calories...

Breakfast
  • Nothing.
    •  I didn't eat breakfast... I grabbed a Diet Sunkist and hopped in the car. I went to Dirt Cheap in Gautier and spent almost $100 in items to resell. Should be some good moneymakers! :)

Lunch
  • 2 Frozen Corndogs (360 calories)
  • Honey Mustard (120 calories)

Dinner
  • Buffalo Wild Wings (777 calories)  
    • Chicken Tender Wrap (1040 calories, but I only ate half: 520 calories)
    • Regular Order Buffalo Chips (257 calories)
    • I babysat Friday night, so I decided to take Jason to the restaurant of his choice on Saturday night - my treat. He picked BWW to the South Carolina vs. Auburn game in the SEC Championship (boo Auburn, btw). I looked on Dottie's Weight Loss Zone before going, and I decided on the Chicken Caesar Wrap with only 560 calories (and only eating half). Unfortunately, this wasn't on the menu, and I kinda panicked. I ordered the chicken tender wrap under pressure, and the calories on it were awful! Oh well... I tried to be good before I went!
Exercise
  • Took Heinz around the neighborhood for 20 minutes (100 calories)

Day 31 ... December 1st!

Breakfast
  • 1/2 of an apple (40 calories)
    • I bought a bag of apples, but the one I ate tasted awful. One of Jason's friends tried another one, and he said it wasn't good either. I ended up throwing them away.

Lunch
  • Velveeta Whole Grain Macaroni and Cheese (310 calories)
    • Jason wanted mac and cheese, so we decided to make a box for lunch. 1/3 of the box was 310 calories, so I had a 1/3 while Jason had 2/3. It was whole grain rotini and cheese. Very good! The normal mac and cheese I buy is the shells and cheese 2% milk is 330 calories, so this helped to shed 20 calories!

Dinner
  • Ranch Garlic Chicken (116 calories)
  • Scalloped Potatoes (320 calories)
    • Right out of the box... delicious! I only meant to eat one serving (160 calories), but with the chicken tasting gross, I decided to eat another helping. :)

Day 30 ... My Back Hurts!

Well Day 30 start out as a pretty good day... I ate breakfast, played with Heinz, started some laundry, and hung out with Jason and his friends for lunch. Before I went to the gym with Laura, I stopped by a friend's house to help her bring some new furniture upstairs to her son's room. I carried the nightstand upstairs, and then we both worked to bring the dresser inside (in a box thankgoodness). I went up the stairs backwards, and at some point on the way up we had to put the dresser down. When I reached down to pick it back up, I felt my back "rip." I've never experienced any type of back pain, but this was awful. After leaving my friends, I went ahead and met Laura at the gym. There was no way I could really exercise, so after 5 minutes on the elliptical I had to switch to the bike.  After the gym I came home and laid around the entire day. My sweet husband went to get my favorite dinner when I don't feel good, and then we found one of those sticky heating pads to attach to my back. I'm hoping my back gets to feeling better... I don't want this to mess up my gym routine and my tennis matches!
